ZOE's Gut Health Bar Is Now in the U.S. It Has 8g of Fiber and Emulsifier-Free Chocolate.

ZOE's first snack bar, which launched in the UK in June, is now sold in the U.S. on ZOE.com. It's $50 for a box of 12, and the gut-health claims are ZOE's.

A snack bar that isn't chasing protein

ZOE’s new bar has 7g of protein.

That’s on purpose. It’s betting on fiber instead.

What's in it

According to ZOE’s release, the bar is ZOE’s first move into snacks. It comes in two flavors: 70% Dark Chocolate + Sea Salt and Raspberry + Goji Berry.

  • More than 10 plant ingredients per bar, including almonds, cashews, edamame, red lentils, flaxseeds, pumpkin seeds, seaweed and kombucha
  • 8g of fiber and 7g of plant protein per bar
  • A 70% dark chocolate that ZOE says it sourced without the emulsifiers commonly found in snack-bar chocolate
  • $50 for a box of 12 (about $4.17 a bar) or $45 a month with a subscription
  • Sold on ZOE.com, with no retail stores listed in the release

What ZOE says it does

These are ZOE’s claims. ZOE says many of the plants’ natural structures are kept intact so they can travel further down the digestive tract to feed gut microbes and help maintain feelings of fullness. It says the chewy bar is designed to be eaten more slowly.

To back that up, ZOE points to its own PREDICT research, which it says shows fast eaters consume about 120 more calories a day than slow eaters. ZOE also ties the bar to its core message of eating 30 different plants a week.

“Snacking itself isn’t the issue. It’s the quality of what people are eating,” said Professor Sarah Berry, ZOE’s chief science officer and a professor of nutritional sciences at King’s College London.

Dr. Tim Spector, ZOE’s scientific co-founder, said the company designed the bar “to prove that snacking doesn’t have to compromise between health or flavor.”

The survey, and who paid for it

The launch came with a survey of 1,000 U.S. adults that the release describes as “commissioned by ZOE.” ZOE says 45% of respondents consider themselves healthy eaters, and 64% have felt misled by marketing claims on food packaging. It’s a brand-commissioned poll, not independent research.

Our read: fiber is the quieter flex

This is our analysis. The bar’s pitch runs against the protein boom, and that’s the interesting part. Federica Amati, ZOE’s head nutritionist, told NutraIngredients in June that while most people get plenty of protein, 96% of UK adults are deficient in fiber, by ZOE’s count. An emulsifier-free chocolate also lines up with the ultra-processed food debate. At about $4.17 a bar and online only, though, this is a premium snack, not an everyday aisle pick.

The reality check

The gut-health and fullness claims are ZOE’s, built on ZOE’s own research. NutraIngredients reported in June that ZOE is running a randomized controlled trial on the bar’s effects on metabolic health and satiety, with results expected by the end of 2026. Until then, there’s no published trial of this bar. ZOE’s name and Spector’s profile aren’t proof it works. If you’re adding fiber because of a digestive or medical condition, talk to your doctor.

The close

ZOE is betting on fiber over protein.

Its own trial will show whether the bar lives up to the pitch.
